Savoury avocado, tomato and pepper tart with bacon



Measures for 4 people:

  • 4 thick slices of rustic bread, or olive bread
  • 2 avocadoes
  • 1 tomato (beef tomato)
  • 1 red pepper
  • 4 slices of bacon
  • 2 dessert spoons of olive oil
  • 1 bunch of basil
  • salt and freshly ground pepper

  1.  Peel the avocado, remove the stone and dice the flesh 
  2.  Place diced flesh in a mixing bowl
  3.  Dice the tomato and pepper and add to the bowl with the basil.  Mix together
  4.  Grill the slices of bread then spread with the avocado mixture
  5.  Drizzle each slice with olive oil
  6.  Grill the bacon and slice thinly - sprinkle over the toast and avocado
