Peach and nectarine pancakes

Ingredients

Measures for 10 pancakes 

  • 250g flour
  • 500ml milk
  • 2 eggs
  • 2 dessert spoons sugar
  • pinch of salt
  • 2 dessert spoons of oil
  • 200g nectarines
  • 150g peaches
  • 35g sugar
  • ½ lemon
  • 1l vanilla ice cream

Pancake mixture

Put the flour in a bowl.  Add half the milk and mix to a paste.  Add the eggs (lightly beaten), sugar, oil and salt and mix together.  Add the remaining milk.  Cook the pancakes in a frying pan.

Sauce

  1. Peel 150g of peaches and the nectarines, remove the stones.  Process the fruit in a food mixer and add 35g sugar and the juice of 1/2 lemon.
  2. Place a ball of ice cream in the centre of each pancake, plus a portion of fruit sauce. Make a parcel of the pancake, holding it closed with toothpicks.  Place in a serving dish, pour over a little more sauce and decorate with slices of remaining nectarines and mint leaves.
