Chilled cucumber and chive soup

Starters

Ingredients

  • 2 cucumbers
  • 200ml milk
  • 1 plain yogurt
  • 1 lemon
  • 1 clove of garlic, chopped
  • Chives and fresh mint
  • 2 slices of cured ham
  • salt and pepper

  1. Peel the cucumbers and remove the seeds.
  2. In a food processor, place the dill, garlic, juice of 1/2 lemon, mint and the milk.  Process.
  3. Add the yogurt and season.
  4. Place in the refrigerator.
  5. Add some reserved chopped chives and 1/2 slice of cured ham per bowl to serve.
